Douglas Fir Sparkletini

This cocktail was originally created by Seattle chef Kathy Casey, but it uses a technique that goes back over hundreds of years! She uses Douglas Fir infused gin, but any pine or fir will do, depending on what is available in your area.  If you infused your gin,  Just be sure to use an organic tree or one that has not been sprayed with chemicals.
1 1/2 ounces douglas fir infused gin
3/4 ounce cranberry juice
3/4 ounce lemon juice
simple syrup to taste
splash of champagne or prosecco


In a champagne glass add the lemon juice, cranberry juice, simple syrup and lightly stir.  Add in the fir or pine infused gin, and top off with champagne, prosecco, or sparkling wine. Garnish with a lemon twist of desired.

This cocktail is perfect for the holidays — an unexpected and delightful taste of christmas!  As a variation, you can substitute pomegranate molassas for the cranberry juice.
